Lucy’s Recipe Corner – Carrot Muffins

Preheat your oven to 190°c (Gas Mark 5) and line your muffin tray with cases. In a bowl, combine the eggs and sugar, then beat in the oil. Next, add the flour, cinnamon, and grated carrots, mixing until everything is well combined. Stir in the raisins.
